Easy Fall Recipes: THM Breakfast “Mufflets”

I used to be an avid follower of Trim Healthy Mama, but some recent health issues of mine have changed this. I do still enjoy most of the recipes though. The Trim Healthy Table cookbook is full of delicious recipes, and this one is definitely one of my favorites.

The “mufflet” is basically an omelet made in a muffin tin. I love it because it’s quick, easy, and you can add anything you want to them. If I were cooking them for me, I’d add onion and peppers, but my kids and hubby are picky. For them, I add only cheese and sausage.

Make them like this: first, brown your sausage in a hot skillet and then chop it up.

Then, mix the whisked eggs, egg whites, black pepper, sea salt, diced onions, diced peppers are cheddar cheese in a bowl.

Then, put the sausage crumbles in the muffin tin and pour the mixture overtop of them.

Bake it at 350 degrees for 25 minutes.

Your entire family will love them, and you can even freeze them and reheat them later.
