
Summer is in full swing over here at the Lumber house. If you have young children, you know they’re not exactly budget minded. Eating lunch out gets rather expensive quickly, and my McDonalds-loving youngest child doesn’t understand why she can’t order from the “Golden Arches” every day. My oldest would happily eat Chick-fil-A every day, but the closest location is 30 minutes from our home AND that would be really expensive to do often.

This year, we have tried to eat at home more, so that we will not only save money, but also eat a better diet. Today, I’m going to share some of our favorite “at home summer lunches.”

- “Chipotle” bowls
If you love Chipotle, you probably are well aware of how expensive it can be. We also live in a small town, so the nearest Chipotle is a half hour away. We like to throw chicken, salsa, and a little seasoning in our slow cooker and cook it on high for four hours. Then, we add black beans, queso, and corn. You can eat this with chips or in a tortilla, or you can eat it alone for a lower carb option.
2. Copycat Cracker Barrel grilled chicken tenderloins

You guessed it- we live in a small town with no Cracker Barrel. You can make their famous grilled chicken tenders yourself. Simply marinate them in Italian dressing, honey, and lime juice and put them in the air fryer. Steam yourself some carrots or potatoes and fry up some breaded okra. The only thing missing are the corn muffins.
